We use the 3 grape-varieties from the Champagne area; the Chardonnay (white grape) gives finesse and elegance; the Pinot Noir gives structure, hardiness and fruity; the Pinot Meunier gives roundness and balance.
The vineyard is located on the terroirs of Cormoyeux and Romery, not far from the Dom Perignon abbey of Hautvillers, and counts a total exploited surface of 11 hectares, including a small part in Passy Grigny. The terroir is characterised by chalky subsoil which acts like a true temperature controller, it captures moisture and gives it back when the vine most needs it.
The average age of our vineyard is 30 years; some plots selected for our best cuvees are 60 years old. Since we are demanding and sensitive to sustainable methods of wine-growing, we daily work to improve our environmental performances.
We control the quality of our spraying by taking into account threshold levels. Our practices for maintaining the soils evolve towards a sound method consisting in implanting, maintaining and nurturing a vegetation cover between the rows of vines.
